Sun-Dried Tomato Sauce – (Creamy 10 Minute Recipe)

Creamy Sun-Dried Tomato Sauce is a perfect blend of sweet, tangy, and cheesy.  Velvety cream and nutty parmesan cheese balance the robust flavor of the sun-dried tomatoes in a luscious sauce that is ready in 10 minutes.

I recently saw a television show on which one of the characters said sun-dried tomatoes were so “80s”! If that is their attitude, they are missing out on a delicious ingredient. 

 In my humble opinion, good ingredients never go out of style, especially sun-dried tomatoes! 

This Sun-dried tomato sauce is a delicious topping for pasta or chicken. In minutes, it elevates a simple dish to a restaurant-quality meal.   We love to pair it with Homemade Cheese Ravioli, Mushroom Ravioli or Spinach Filled Ravioli

The simple ingredients in this easy sauce are pantry staples that I always have on hand and that can be found in any grocery store.  

It is built on layers of flavor from sun-dried tomatoes, garlic, tomato paste, white wine, herbs, and a combination of parmesan and pecorino cheese. Then, I add heavy cream, which creates a smooth, velvety texture while softening the robust flavors for a perfectly balanced bite.

Ingredients 

Chopped Sundried Tomatoes: I like sundried tomatoes preserved in oil. I use the flavorful oil from the jar rather than plain olive oil to increase the sundried tomato flavor in the sauce. 

Minced Fresh Garlic

Tomato Paste

White Wine:  You can use any white wine you have.  I have made this with Chardonnay, Pinot Grigio, or Sauvignon Blanc with good results.  If you prefer not to use wine, you can substitute chicken broth.

Herbs: Thyme Basil and Oregano.  You can also use an Italian seasoning blend.

Heavy Cream:  The heavy cream will thicken quickly. 

Grated Cheese: A blend of parmesan cheese and pecorino romano provides a nice balance of nuttiness and saltiness to the sauce, but you can use either.

Step by Step Instructions  

1. Heat the sun-dried tomato oil in a large skillet set over medium heat.  Add the sundried tomatoes, minced garlic, and herbs to the pan and cook for 2 minutes. Add the tomato paste and cook for a minute.

2. Stir in the white wine and cook until the wine is reduced by half.  

3. Add the heavy cream, stirring to combine all the ingredients.  

4. When the sauce is heated through and begins to thicken, remove it from the heat and add the grated cheese.  Stir until the cheese melts and the sauce is smooth and creamy.

Serving Suggestions and Variations

This sauce makes it easy to create a delicious dinner recipe that your family will ask for again and again. 

  • To make a creamy sun-dried tomato pasta, cook your favorite pasta until al dente, drain it, reserve a ladle of water, and toss the pasta in the creamy sauce. If the sauce is too thick, use the reserved pasta water to thin it out. Serve with additional grated cheese.
  • Add delicious flavor to skillet chicken. Cook chicken breast, thighs, or even chicken cutlets in the skillet. Transfer the chicken to a plate, and make the sundried tomato sauce in the same skillet. Add the chicken back to the sauce and cook for 2 minutes until heated through.  Serve with some crusty bread to soak up the delicious sauce! 
  • This creamy sundried tomato sauce is also great served over cooked vegetables.  
  • Another great option is to add a handful of fresh spinach to the sauce.    

Storing Leftovers

Leftover sauce can be refrigerated in an airtight container for several days.  It can be reheated on the stovetop over low heat or in a microwave.

Ingredients
  

  • ½ cup Sun-dried Tomatoes In oil, chopped
  • 1 clove Garlic Minced
  • 1 tbsp Tomato Paste
  • cup White Wine
  • 1 tsp Thyme Dried
  • 1 tsp Basil Dried or fresh
  • ½ tsp Oregano Dried
  • 1 cup Heavy Cream
  • ¼ cup Parmigiano Reggiano Grated
  • ¼ cup Pecorino Romano Grated
  • ½ tsp Kosher Salt
  • ¼ tsp Black Pepper Ground

Instructions
 

  • Heat 2 tbsp. of the sundried tomato oil in a large skillet. Add the sundried tomatoes, garlic, thyme, basil, oregano, salt, and pepper to the oil and saute over medium-low heat for one minute.
  • Add the tomato paste to the skillet and mix well. Stir in the white wine, and reduce by half. Add the salt and pepper.
  • Stir in the heavy cream and cook until the sauce thickens enough to coat the back of a spoon. Take the skillet off the heat and stir in the grated cheese.
  • Serve over your favorite pasta or spoon over chicken or vegetables.
