How to Get Crispy Sheet Pan Sausage and Potatoes
The key to getting crispy sausage and potatoes without drying everything out is to cook in two stages.
Start by roasting at 375°F until the potatoes are tender and the sausage is fully cooked. Then turn on the broiler for a few minutes at the end to create those golden crispy edges.
This method lets everything cook evenly first, so nothing burns or dries out, while giving you that final perfect roasted finish.
Ingredients

Italian Pork Sausage: You can use either sweet or hot sausage. When I am feeding a lot of people, I will make one sheet pan with sweet Italian sausage links and one with hot sausage for those who like spicy sausage. You can also substitute chicken sausage.
Potatoes: I like to use baby potatoes or russet potatoes, but you can use any kind you like. Make sure to cut them into equal-sized pieces so they cook evenly.
Bell Peppers: Any kind of bell pepper is fine. I used yellow and orange peppers this time, but I often add a red or green bell pepper if I have it.
Onion: Use a yellow or sweet onion, cut into thick slices or chunks.
Seasonings: Italian Seasoning, Garlic Powder, Kosher Salt, and Ground Black Pepper


How to Make Sheet Pan Sausage and Potatoes
- Toss the cut potatoes, olive oil, and seasonings in a large bowl. Transfer the potatoes to a rimmed baking sheet lined with aluminum foil or parchment paper and bake in a preheated 375-degree F oven for 20 minutes.
- Scatter the onions and bell peppers over the potatoes, lay the sausage on top of the vegetables, and return the pan to the oven for 20-25 minutes. The sausage is done when the internal temperature reaches 160 degrees F, and the juices run clear.
- For a final crisp, turn the oven on to broil for a few minutes until the sausage is browned.
Cooking Tips
- Leave the skins on the potatoes: They add flavor and get extra crispy!
- Put the potatoes, cut side down, on the baking sheet: It helps create crispy edges.
- Don’t overcrowd the pan: Space allows everything to roast not steam.
- Shake the pan after the first 10 minutes: It prevents sticking and promotes even browning.
- Finish under the broiler: A few minutes at the end crisps the sausage and the edges.

Storing and Reheating
One of the best things about roasted sausage is that it tastes just as good the next day! If you have leftovers, place them in an airtight container and refrigerate for up to 3 days. You can reheat them in the microwave or the oven. The sausage and potatoes can be reheated in a 350-degree oven for 15 minutes or until heated through.

- 3 tbsp Olive Oil
- 1½ lbs Italian Sausage
- 24 oz Baby Potatoes halved
- 1 Onion sliced
- 1 Bell Pepper thick sliced
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
- 1 tsp Kosher Salt
- ½ tsp Ground Black Pepper
Instructions
- Preheat the oven to 375℉. Toss the potatoes with the olive oil, garlic powder, Italian seasoning, salt, and black pepper. Place the potatoes cut side down on a baking sheet lined with parchment paper and bake for 20 minutes.
- Remove the pan from the oven, scatter the sliced onions and bell pepper over the potatoes, and top them with the Italian sausage. Return the baking sheet to the oven and bake for 25 minutes or until the sausage reaches an internal temperature of 160℉.
Notes
- Put the potatoes cut side down on the baking sheet so they get golden and crispy around the edges.
- Don’t overcrowd the potatoes in the baking dish.
- Shake the pan after the first 10 minutes to keep the potatoes from sticking.
- At the end of the cooking time, turn the broiler on for a few minutes to crisp up the sausage a bit.
