Ingredients
Italian Pork Sausage: You can use either sweet or hot sausage. When I am feeding a lot of people, I will make one sheet pan with sweet Italian sausage links and one with hot sausage for those who like spicy sausage. You can also substitute chicken sausage.
Potatoes: I like to use baby potatoes or russet potatoes, but you can use any kind you like. Make sure to cut them into pieces of equal size so that they cook evenly.
Bell Peppers: Any kind of bell pepper is fine. I used yellow and orange peppers this time, but I often add a red or green bell pepper if I have it.
Onion: Use yellow or sweet onion cut into thick slices or chunks.
Seasonings: Italian Seasoning, Garlic Powder, Kosher Salt and Ground Black Pepper

How to Make This Simple Sheet Pan Dinner
- Toss the cut potatoes, olive oil, and seasonings in a large bowl. Transfer the potatoes to a rimmed baking sheet lined with aluminum foil or parchment paper and bake in a preheated 375-degree F oven for 20 minutes.
- Scatter the onions and bell peppers over the potatoes, lay the sausage on top of the vegetables, and return the pan to the oven for 20-25 minutes. The sausage is done when the internal temperature reaches 160 degrees F, and the juices run clear.
Cooking Tips
- Put the potatoes cut side down on the baking sheet so they get golden and crispy around the edges.
- Don’t overcrowd the potatoes in the baking dish.
- Shake the pan after the first 10 minutes to keep the potatoes from sticking.
- At the end of the cooking time, turn the broiler on for a few minutes to crisp up the sausage a bit.

Storing and Reheating
One of the best things about roasted sausage is that it tastes just as good the next day! If you have leftovers, place them in an airtight container and store them in the refrigerator for up to 3 days. You can reheat them in the microwave or the oven. The sausage and potatoes can be reheated in a 350-degree oven for 15 minutes or until heated through.

Ingredients
- 3 tbsp Olive Oil
- 1½ lbs Italian Sausage
- 24 oz Baby Potatoes halved
- 1 Onion sliced
- 1 Bell Pepper thick sliced
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
- 1 tsp Kosher Salt
- ½ tsp Ground Black Pepper
Instructions
- Preheat the oven to 375℉. Toss the potatoes with the olive oil, garlic powder, Italian seasoning, salt, and black pepper. Place the potatoes cut side down on a baking sheet lined with parchment paper and bake for 20 minutes.
- Remove the pan from the oven, scatter the sliced onions and bell pepper over the potatoes, and top them with the Italian sausage. Return the baking sheet to the oven and bake for 25 minutes or until the sausage reaches an internal temperature of 160℉.
